“Probably the best food I’ve tasted was my grandmothers. Like all women from our pioneering era they gave food a taste that we don’t get today with imitation fuels like gas and electricity. Their secret? Natural fuels like wood and charcoal which give a heat that is untainted allowing food to retain its fresh natural flavour. We have rediscovered the art of cooking with charcoal, which is still in everyday use in some parts of the world today. Charcoal is simply burnt or baked wood. The wood we use is mallee tree roots which are sourced from South Australian bushland using time honoured traditions, the roots are placed in earthen kilns and baked into a more combustible form ‘charcoal’. The mallee roots are renowned for their fierce burning and intense heat qualities which impart a sweet inoffensive smoke. Food from our ‘Mallee Grill’ when cooked in this traditional way not only enhances the natural taste, but gives its own taste which is flavourable as it is distinctive.”
Thomasina’s Original Charcoal Grill is conveniently located within the Astor Inn Wagga Hotel and is open for breakfast, lunch and dinner. A bar, cafe and entertainment areas are also available.
